Click on 'Rarity List' under the 'Other' category on the right of your screen to find out what are the rarest Pokemon.
The rarest are generally anything other than shinies or normals (so Shadows, Curseds, Luminous and Golden) are all 'rare'. You can get Shadows and 1 other sort (I can't remember) through the Laboratory. Just complete the first task and earn lab credits by completing more, buy a Shadow/other ball and then go to a map and defeat the Shadow/other when you see it and you will receive it.
