I really like the new eeveelution. I am not sure about the anime(I don't watch it), but I will be eager to use the Fairy type in games.

I don't think they can make Clefairy or Chansey a "Fairy" type since their types have already been introduced.
I doubt they change it anyway but I guess it's possible.

My honest opinion is that the Pokemon are starting to get more uninteresting and boring as they continue.
An example is the seasons in Generation 5. I don't think really needed to be in the game, other than just for Deerling and Sawsbuck which really could've just stayed one color.
Basically, whatever they decide to do is still up to them. My opinion on new type combinations doesn't really matter. If they want a new combo, let them have it.

I didn't know of the new type-fairy.
Hope they are going to introduce strong moves or attacks for this type of pokemon and we can just hope that the new attacks is strong enough to faint a Strong Dragon Pokemon like Haxorus?
My strong guess about its weakness is Ghost Type as it doesn't have many advantange rather than its ability to nullify physical attacks-which is cool!
