I was wondering if anyone knew what the chances of finding a shiny axew, shiny shinx, and a shiny glalie in the maps were?

There's an equal chance of finding any Shiny Pokemon on the maps, which is 1/500. So you'll have a 1/500 chance of finding either ShinyAxew, ShinyGlalie or ShinyShinx :)
